Ingredients

  • 1 cup (200g) caster sugar
  • 3/4 cup (90g) plain flour
  • 1/4 cup (25g) cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup (125ml) vegetable oil
  • 1/2 cup (125ml) water
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 1/2 cup (90g) walnuts, chopped
  • 1/2 cup (90g) dark chocolate chips
  • 1/2 cup (125ml) cream
  • 1/4 cup (25g) cocoa powder, extra

Instructions

Preheat oven to 180°C (350°F). Grease and line a 20cm (8”) round cake tin with baking paper.

In a large bowl, combine the sugar, flour, cocoa powder, baking powder, baking soda, and salt. Add the oil, water, and vanilla and mix until combined.

Add the eggs one at a time, mixing well after each addition. Fold in the walnuts and chocolate chips.

Pour the mixture into the prepared tin and bake for 40 minutes or until a skewer inserted into the centre comes out clean.

Allow the cake to cool completely before topping with ganache. To make the ganache, heat the cream and extra cocoa powder in a small saucepan over medium heat until it just starts to simmer. Remove from the heat and stir in the dark chocolate chips until melted and smooth.

Pour the ganache over the cooled cake and spread it out evenly. Sprinkle with chopped walnuts and chill in the fridge until set.
