Gluten-Free Dark Chocolate Cake Recipe
Ingredients
Making a delicious gluten-free dark chocolate cake is easier than you think. Start with your dry ingredients: 150g plain gluten-free flour, 1 teaspoon baking powder, 2 teaspoons bicarbonate of soda, 1 teaspoon xanthan gum, 250g caster sugar, 85g cocoa powder and a pinch of salt. For the wet ingredients, you need: 2 eggs, 150ml vegetable oil, 150ml dairy-free milk and 2 teaspoons vanilla extract.
Instructions
Start by preheating your oven to 180 degrees Celsius and line two 20 cm round cake tins with baking paper. Sift all the dry ingredients into a large bowl and stir to combine. In a separate bowl, whisk together the eggs, oil, milk and vanilla extract until smooth. Pour the wet ingredients into the dry ingredients and mix until completely combined. Divide the batter between the two tins, smooth the tops and bake for 25-30 minutes.
Once cooked, remove the cakes from the oven and cool in the tins for 10 minutes before transferring to a wire cooling rack. When the cakes are completely cool, make the chocolate ganache. Place 200g dark chocolate and 200ml dairy-free cream in a bowl and heat in the microwave for 30 second intervals, stirring in between until melted and smooth. Spread one of the cakes with the ganache, then place the other cake on top and press down gently. Place in the fridge for 30 minutes to allow the ganache to set.
Once the ganache is set, make the chocolate buttercream. Place 150g dairy-free butter and 150g icing sugar in a bowl and mix until creamy. Melt 150g dark chocolate and add to the buttercream, mix until combined. Spread the buttercream over the top and sides of the cake and decorate with fresh berries.
