  • 1 cup granulated sugar
  • ¼ cup cocoa powder
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup buttermilk
  • ½ cup vegetable oil
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 2 ounces semisweet chocolate, melted and cooled
  • For the frosting:
  • 4 ounces cream cheese, softened
  • 1/3 cup butter, softened
  • 3 cups confectioners’ sugar
  • 1 teaspoon vanilla extract
  • 2 tablespoons heavy cream

Instructions

For the cake: Preheat the oven to 350°F. Grease two 8-inch round cake pans and dust with cocoa powder. In a medium bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt. In a large bowl, whisk together the buttermilk, oil, vanilla, eggs, and cooled melted chocolate. Bake for 25 to 30 minutes, or until a toothpick inserted into the center of the cakes comes out clean. Let the cakes cool in the pans for 10 minutes, then turn out onto a wire rack to cool completely.

For the frosting: In the bowl of a stand mixer fitted with the paddle attachment, beat the cream cheese and butter until smooth. Add the confectioners’ sugar and mix until combined.
