This recipe will teach you how to make the perfect Madeira cake.

Ingredients

  • 2 cups of all-purpose flour
  • 1 teaspoon of baking powder
  • ½ teaspoon of baking soda
  • ¼ teaspoon of salt
  • ½ cup of butter or margarine, melted and cooled
  • 1 cup of sugar
  • 3 eggs
  • 1 teaspoon of vanilla extract
  • ½ cup of buttermilk
  • ¼ cup of orange juice
  • 1 tablespoon of freshly grated orange zest
  • 1 tablespoon of brandy or cognac

Instructions

Preheat your oven to 350 degrees F. Grease and flour a 9-inch round cake pan.

In a medium bowl, sift together the flour, baking powder, baking soda and salt. Set aside.

In a larger bowl, cream together the butter and sugar until light and fluffy. Add the eggs one at a time, beating until each one is fully incorporated. Beat in the vanilla extract.

Alternating between the dry ingredients and the buttermilk and orange juice, add the ingredients to the butter mixture, beating until just combined. Stir in the orange zest and brandy.

Pour the batter into the prepared cake pan and bake for 30 minutes, or until a toothpick inserted into the center of the cake comes out clean.

Allow the cake to cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely.
