  • 1/4 cup rainbow nonpareils
For the decorations, you’ll need:

  • 2 tablespoons white chocolate chips
  • 1/4 cup white candy melts
  • 1/8 cup blue candy melts
  • 1/8 cup pink candy melts
  • 1/4 cup yellow candy melts

Instructions

To make the cake, preheat the oven to 350°F and grease two 9-inch round cake pans. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. In a large bowl, beat together the butter and sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Add the vanilla extract and mix until combined. Add the dry ingredients and the buttermilk to the butter mixture, alternating between the two and beginning and ending with the dry ingredients. Fold in the rainbow sprinkles and nonpareils and mix until just combined. Divide the batter evenly between the two cake pans and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Let the cakes cool completely before frosting. To make the frosting, beat together the powdered sugar, butter, salt, and vanilla extract until light and fluffy. Add the heavy cream and mix until combined. Fold in the nonpareils. To assemble the cake, remove the cooled cakes from the pans and place one on a serving platter. Spread a layer of frosting over the top of the cake and place the other cake on top. Spread the remaining frosting over the top and sides of the cake. To decorate the cake, sprinkle the rainbow sprinkles, nonpareils, white chocolate chips, and candy melts over the top and sides of the cake.
