Ingredients

This recipe makes one 8-inch round cake.

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup (1 stick) salted butter, softened
  • 3/4 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup whole milk
  • Frosting:
  • 1 cup (2 sticks) salted butter, softened
  • 3 1/2 cups powdered sugar
  • 3 tablespoons heavy cream
  • 1/2 teaspoon vanilla extract
  • Colored sprinkles, for decoration (optional)

Instructions

Making the Cake Layers:

Preheat oven to 350°F. Grease two 8-inch round cake pans with butter and flour.

In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.

Using a hand mixer or stand mixer, beat the butter until light and fluffy. Gradually add the sugar and beat until fully combined. Add the eggs, one at a time, beating until fully incorporated. Beat in the vanilla extract.

Add the dry ingredients to the butter mixture, alternating with the milk. Beat until just combined. Scrape down the sides and bottom of the bowl to make sure everything is fully incorporated.

Divide the batter between the two cake pans. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean. Let the cakes cool in the pans for 5 minutes, then turn out onto a wire rack to cool completely.

Making the Buttercream Frosting:

Using a hand mixer or stand mixer, beat the butter until light and fluffy. Gradually add the powdered sugar and beat until fully combined. Beat in the heavy cream and vanilla extract.

Assembling the Cake:

Place one layer on a cake stand or serving plate. Spread a generous layer of buttercream frosting over the cake. Place the second layer on top and spread the remaining frosting over the top and sides of the cake. Decorate with sprinkles, if desired.
