Recipe For Strawberry Funnel Cake Cupcakes
Ingredients
For the cupcakes you need:
- 1 box of your favorite white cake mix
- 3 eggs
- ½ cup vegetable oil
- 1 teaspoon vanilla extract
- 1/2 cup of strawberry puree
- 1/4 cup of sugar
- 1/4 teaspoon of salt
- 1/2 teaspoon of baking powder
- 1/2 cup of all-purpose flour
- 1/2 cup of vegetable oil
- 1/4 cup of powdered sugar
Instructions
Preheat oven to 350°F. Grease and line a muffin tin with cupcake liners.
In a large bowl, mix together the cake mix, eggs, vegetable oil, vanilla extract, and strawberry puree until combined.
In a separate bowl, mix together the sugar, salt, baking powder, and flour. Slowly add the dry ingredients to the wet ingredients and mix until just combined.
Fill each cupcake liner about 2/3 full with the batter and bake for 15-20 minutes, or until a toothpick inserted into the center of the cupcake comes out clean.
Remove cupcakes from the oven and let cool completely before frosting.
To make the frosting, beat together the vegetable oil and powdered sugar until smooth and creamy. Frost the cupcakes and top with a dollop of strawberry puree.
