Ingredients

For the cake, you will need:

  • 225g (8oz) softened butter
  • 225g (8oz) caster sugar
  • 4 large eggs
  • 225g (8oz) self-raising flour
  • 2 tsp baking powder
  • 2–3 tbsp milk
  • 1 tsp vanilla extract

For the filling, you will need:

  • 3–4 tbsp raspberry jam
  • 3–4 tbsp strawberry jam
  • 2–3 tbsp apricot jam
  • 150ml (5fl oz) double cream, whipped

Instructions

1. Preheat the oven to 180C/Gas 4 and grease and line two 20cm (8in) sandwich tins.

2. Using an electric whisk, beat the butter and sugar together in a bowl until light and fluffy. Whisk in the eggs, one at a time, adding a tablespoon of the flour with the last egg to prevent the mixture from curdling.

3. Sift the remaining flour and baking powder into the bowl and fold in with a metal spoon. Add the milk and vanilla extract and mix until smooth. Divide the mixture evenly between the two tins and spread out with a palette knife.

4. Bake for 20–25 minutes or until golden-brown and the cakes spring back when lightly pressed. Leave to cool for a few minutes in the tin, then turn out onto a wire rack to cool completely.

5. To assemble the cake, spread the raspberry jam over one of the sponges, then spread the strawberry jam over the other. Place one sponge on top of the other and spread the apricot jam over the top. Spread the cream over the top and sides of the cake.

6. To serve, cut into wedges and enjoy!
