Ingredients

For the cake:
  • 3 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup butter, softened
  • 1 1/4 cups granulated sugar
  • 2 eggs
  • 1 teaspoon peppermint extract
  • 1 1/4 cups buttermilk

For the frosting:
  • 3/4 cup butter, softened
  • 3-4 cups powdered sugar
  • 1 teaspoon peppermint extract
  • 2-3 tablespoons heavy cream or milk

For the topping:
  • Holiday sprinkles

Instructions

Making the Cake

Begin by preheating your oven to 350°F. Grease two 9-inch round cake pans with butter or non-stick cooking spray. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

In a large bowl, use an electric mixer to beat together the butter and sugar until light and fluffy. Beat in the eggs, one at a time. Add in the peppermint extract and mix until combined. Alternately add in the flour mixture and the buttermilk, making sure to start and end with the flour mixture. Divide the batter evenly between the two prepared cake pans and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Allow to cool completely before frosting.

Making the Frosting

In a large bowl, use an electric mixer to beat together the butter, 3 cups of powdered sugar, and the peppermint extract until light and fluffy. If the frosting is too thick, add in the heavy cream or milk, one tablespoon at a time, until desired consistency is reached. If the frosting is too thin, add in the remaining 1 cup of powdered sugar. Divide the frosting between the two cooled cakes and spread evenly. Top with holiday sprinkles and serve.
