  • 3/4 cup almond flour
  • 1/2 cup coconut flour
  • 2/3 cup coconut sugar
  • 1/4 cup maple syrup
  • 1/2 cup almond milk
  • 2 teaspoons baking powder
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon sea salt
  • 1/2 cup raisins
  • 1/2 cup dried cherries
  • 1/2 cup chopped almonds
  • 1/4 cup chopped candied ginger
  • 1/4 cup of your favorite vegan icing sugar (optional)

Instructions

Making this gluten and dairy free Christmas cake is easy and doesn't require any special techniques or tools. All you need is an 8-inch round cake tin, lined with baking parchment and greased with a little vegan butter. Preheat your oven to 350°F.

In a large bowl, cream together the vegan butter and coconut sugar until light and fluffy. Beat in the maple syrup and almond milk until combined. In a separate bowl, sift together the almond flour, coconut flour, baking powder, cinnamon, nutmeg, cloves, ginger and salt. Beat the dry ingredients into the wet ingredients until just combined. Fold in the raisins, cherries, almonds and candied ginger.

Spoon the mixture into the prepared tin, and spread it out evenly. Bake in the preheated oven for 40 minutes, or until a skewer inserted into the centre comes out clean. Remove from the oven and allow to cool completely in the tin.

Once cooled, turn the cake out onto a plate. Dust with icing sugar, if desired. The cake will keep for up to 5 days if stored in an airtight container.
