Ingredients

This recipe for gingerbread cake with buttermilk is made with easy to find ingredients. You will need the following: all-purpose flour, baking powder, baking soda, ground ginger, ground cinnamon, ground cardamom, salt, butter, light brown sugar, eggs, molasses, buttermilk, and granulated sugar.

To make the cake, you will also need a 9-inch springform pan and parchment paper to line the bottom of the pan. Additional ingredients may be needed if you are making the optional cream cheese frosting.

Instructions

Begin by preheating your oven to 350 degrees F. Prepare your 9-inch springform pan by lightly greasing it and then lining the bottom with parchment paper. Set aside.

In a medium-sized bowl, sift together the all-purpose flour, baking powder, baking soda, ground ginger, ground cinnamon, ground cardamom, and salt. Set the bowl aside.

In the bowl of a stand mixer, or in a large bowl using a hand mixer, beat together the butter and light brown sugar until light and fluffy. Beat in the eggs one at a time, making sure each egg is fully incorporated before adding the next. Beat in the molasses.

With the mixer on low speed, add in the dry ingredients in two batches, alternating with the buttermilk. Beat until just combined.

Pour the batter into the prepared springform pan. Bake in the preheated oven for 35-40 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Once the gingerbread cake has cooled, you can top it with a cream cheese frosting, if desired. To make the frosting, beat together 8 ounces of softened cream cheese, 1/2 cup of butter, and 2 cups of powdered sugar until light and fluffy. Spread the frosting over the top of the cooled cake.

The gingerbread cake can be served as is, or you can sprinkle the top with a bit of granulated sugar for a bit of extra sweetness. Enjoy!
