Ingredients
This recipe for Waldorf Red Velvet Cake requires a few simple ingredients:
- 2 cups of all-purpose flour
- 1 teaspoon of baking powder
- 1 teaspoon of baking soda
- ½ teaspoon of salt
- 1 cup of vegetable oil
- 2 tablespoons of white vinegar
- 2 cups of granulated sugar
- 2 tablespoons of cocoa powder
- 3 eggs, beaten
- 1 teaspoon of vanilla extract
- 1 teaspoon of red food coloring
- 1 cup of buttermilk
For the frosting, you will need:
- 1 cup of unsalted butter, at room temperature
- 2 cups of confectioners’ sugar
- 2 tablespoons of unsweetened cocoa powder
- 1 teaspoon of vanilla extract
- 2 tablespoons of heavy cream or milk
- 1 cup of chopped pecans
Instructions
Begin by preheating your oven to 350 degrees Fahrenheit. Grease two 8-inch round cake pans and line the bottoms with parchment paper. Sift together the flour, baking powder, baking soda and salt in a medium bowl. Set aside.
In a separate large bowl, mix together the oil, vinegar, sugar, cocoa powder, eggs, vanilla extract and red food coloring. Beat until the batter is creamy and combined. Add the dry ingredients to the wet ingredients and mix until just combined. Slowly add the buttermilk and mix until everything is well blended.
Divide the batter evenly between the prepared cake pans and bake for 20 to 25 minutes or until a toothpick inserted into the center comes out clean. Allow the cakes to cool completely before frosting.
To make the frosting, beat the butter in a medium bowl until light and fluffy. Add the confectioners’ sugar, cocoa powder, vanilla extract and heavy cream and beat until creamy. Spread the frosting evenly over the cooled cakes and top with the chopped pecans. Slice and serve.
