Sticky Lemon Cake Recipe
Ingredients
This recipe requires the following ingredients:
- 1 cup of butter, melted and cooled
- 2¼ cups of all-purpose flour
- 1 teaspoon of baking powder
- 1 teaspoon of baking soda
- ¼ teaspoon of salt
- 1¾ cups of granulated sugar
- 3 eggs
- 1 teaspoon of vanilla extract
- 1 cup of plain Greek yogurt
- 1 tablespoon of freshly squeezed lemon juice
- 1 teaspoon of lemon zest
- ¼ cup of honey
Instructions
Before you begin, preheat the oven to 350°F. Grease and flour a 9-inch cake pan and set aside.
In a medium bowl, combine the flour, baking powder, baking soda, and salt. Whisk together until combined and set aside.
In a large bowl, whisk together the melted butter and sugar until creamy. Then, add in the eggs one at a time, whisking after each addition. Add in the vanilla extract, Greek yogurt, lemon juice, and lemon zest. Whisk until combined.
Slowly add in the dry ingredients into the wet ingredients and mix until just combined. Do not overmix. Pour the batter into the prepared pan and spread evenly.
Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean. Allow the cake to cool for 10 minutes before removing from the pan and allowing to cool completely.
Meanwhile, in a small saucepan over medium heat, combine the honey and lemon juice. Simmer for 5 minutes, stirring occasionally. Once the cake is cool, pour the honey lemon sauce over the top of the cake and allow it to soak in.
