Place the two sponges together with the jam side inwards. Take two more sponges and spread apricot jam on the cut side of one of them. Place the other sponge on top with the jam side inwards and join the two sponges together. Place the two joined sponges on top of the other two sponges to form the Battenberg cake.
6. Roll out the marzipan on a surface lightly dusted with icing sugar to a rectangle measuring 24 x 35cm (9½ x 14in). Place the cake on top and wrap the marzipan around the cake, pressing it gently to the sides. Trim off any excess marzipan. Cut into 12 equal sized slices. Serve and enjoy!
