Ingredients

  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup butter, softened
  • 1 cup granulated sugar
  • 2 eggs
  • 3 ripe bananas, mashed
  • ½ cup buttermilk
  • ½ teaspoon vanilla extract
  • ½ teaspoon ground cinnamon
  • For the buttercream frosting:
  • 1 cup butter, softened
  • 3 – 4 cups powdered sugar
  • 2 – 3 tablespoons heavy cream or milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon

Instructions

Preparing the Cake

Preheat your oven to 350 degrees F (175 degrees C). Grease and flour a 9-inch round cake pan.

In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the mashed bananas.

Beat in the dry ingredients alternately with the buttermilk, starting and ending with the dry ingredients. Mix in the vanilla and cinnamon. Pour the batter into the prepared pan.

Bake for 30 to 45 minutes, or until a tester inserted into the center of the cake comes out clean. Allow to cool in the pan for 10 minutes, then turn out onto a wire rack and cool completely.

Preparing the Buttercream Frosting

In a medium bowl, cream the butter until light and fluffy. Beat in the powdered sugar, one cup at a time. Mix in the cream or milk, vanilla, and cinnamon.

Continue to beat until the frosting is creamy and smooth. If it is too thick, add a little more cream or milk. If it is too thin, add more powdered sugar.

Assembly

Once the cake has cooled, spread the frosting on top of the cake in an even layer. You can also use the frosting to cover the sides of the cake, if desired.

Garnish the cake with chopped nuts, if desired. Serve at room temperature.
